On the fourth day of Christmas…

I know the so-called cupcake craze is over, but I don’t care I’m still in love with cupcakes. If I could eat a cupcake everyday and not weigh 300 pounds, I totally would! And everyday that cupcake would be Red Velvet. A side note for local Bostonians, the best Red Velvet cupcake in the city can be found at Post 390, with Sweet on Newbury coming in at a close second. Disclaimer, I haven’t been to every cupcake shop in town so if you think your local shop has the best Red Velvet let me know so I can go and do some taste testing ASAP!

Anyway, back to Red Velvet…I LOVE it!! The color, the taste, the texture, the cream cheese frosting. What’s not to love? So when I came across this Red Velvet cookie recipe, I needed to try it! The original recipe from How Sweet it is used regular chocolate chips, which I’m sure is delightful, but I wanted something different. Maybe something to mimic the taste of frosting…enter white chocolate. It’s not really chocolate per se, nor is it cream cheese frosting, however, it could mimic a good buttercream. Personally I think the flavors meshed together perfectly. You don’t get the true red velvet color with only a teaspoon of food coloring, but the taste is pretty spot on.

 Red Velvet White Chocolate Chip Cookies (adapted from: How Sweet it is)

1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/3 cup cocoa powder
1 teaspoon red food coloring
1/2 cup white chocolate chips

Preheat oven to 375.

Cream butter and sugars together until fluffy in the bowl of an electric mixer. Add egg and vanilla and combine until smooth. Beat in red food coloring. Stir in cocoa, flour, baking soda and salt until just combined, scraping down the sides when needed. Fold in white chocolate chips.

Scoop out 1-2 tablespoons of dough and set on baking sheet. Bake for 10-12 minutes.

Makes about 1 1/2 dozen
